- 1 large flour tortilla
- ¼ cup fresh blueberries
- 1 teaspoon honey or maple syrup
- 2–3 tablespoons cream cheese, softened
- A pinch of cinnamon
- Cooking spray or 1 teaspoon butter
Instructions
- Lay the flour tortilla flat on a clean surface. Spread the softened cream cheese evenly over one half of the tortilla.
- Sprinkle the fresh blueberries and cinnamon over the cream cheese. Drizzle with honey or maple syrup.
- Fold the empty half of the tortilla over the filled half, creating a semi-circle.
- Heat a non-stick skillet or griddle over medium heat. Lightly coat with cooking spray or melt the butter.
- Carefully place the folded quesadilla into the hot skillet. Cook for 2-3 minutes per side, or until golden brown and the cream cheese is warm and melty.
- Remove from the skillet, slice in half if desired, and serve warm.
Notes
Feel free to experiment with other fruits like sliced strawberries or bananas. A sprinkle of chopped nuts like pecans or walnuts can add a delightful crunch. For an extra treat, a dusting of powdered sugar on top is always welcome!
