- 4 chicken thighs with skin and bone
- 4 chicken drumsticks
- 2 cups buttermilk
- 2 cups all-purpose flour
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cooking spray or melted butter, for baking
Instructions
- Prepare all spices and flour. Place chicken in a large bowl.
- Pour buttermilk over chicken, cover all pieces, refrigerate 2 hours or overnight.
- Mix flour, paprika, garlic powder, onion powder, thyme, salt, and pepper in another bowl.
- Remove chicken from buttermilk, let drip, coat each piece in flour mix.
- Line baking tray with foil, place chicken on tray, spray or brush with butter/oil.
- Bake at 425°F (220°C) for 35-45 minutes, turning halfway through.
- Check chicken is golden brown and cooked through (165°F internal temp).
- Let cool a few minutes before serving.
Notes
Soaking chicken in buttermilk keeps it juicy. Use medium heat to avoid burning. Double coat for extra crunch.
