Homemade KFC-Style Oven-Baked Chicken: A Crowd-Pleasing Favorite

Ingredients

  • 4 chicken thighs with skin and bone
  • 4 chicken drumsticks
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray or melted butter, for baking

Instructions

  1. Prepare all spices and flour. Place chicken in a large bowl.
  2. Pour buttermilk over chicken, cover all pieces, refrigerate 2 hours or overnight.
  3. Mix flour, paprika, garlic powder, onion powder, thyme, salt, and pepper in another bowl.
  4. Remove chicken from buttermilk, let drip, coat each piece in flour mix.
  5. Line baking tray with foil, place chicken on tray, spray or brush with butter/oil.
  6. Bake at 425°F (220°C) for 35-45 minutes, turning halfway through.
  7. Check chicken is golden brown and cooked through (165°F internal temp).
  8. Let cool a few minutes before serving.

Notes

Soaking chicken in buttermilk keeps it juicy. Use medium heat to avoid burning. Double coat for extra crunch.
