    • 2 cups cooked chicken, shredded or diced
    • 2 cups fresh spinach, chopped
    • 1 cup mushrooms, sliced
    • 1 cup heavy cream
    • 1 cup shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 2 cloves garlic, minced
    • 1 teaspoon Italian seasoning
    • Salt and pepper to taste
    • Olive oil for sautéing

    Instructions

    1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a baking dish.
    2. Sauté Vegetables: In a skillet, heat a drizzle of olive oil over medium heat. Add the sliced mushrooms and minced garlic, sautéing until the mushrooms are tender. Add the chopped spinach and cook until wilted. Season with salt, pepper, and Italian seasoning.
    3. Combine Ingredients: In a large bowl, mix together the cooked chicken, sautéed spinach and mushrooms, heavy cream, half of the mozzarella cheese, and half of the Parmesan cheese until well combined.
    4. Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly.
    5. Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese on top.
    6. Bake: Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
