Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, lemon zest, and lemon juice.
- Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Prepare Cream Cheese Filling: In a separate bowl, beat together the cream cheese, sugar, egg, and vanilla extract until smooth.
- Layer in Pan: Pour half of the lemon bread batter into the prepared loaf pan. Spread the cream cheese filling over the batter, then top with the remaining lemon batter.
- Bake: Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
