- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package (3.4 oz) instant vanilla pudding mix
- 2 cups milk
- 2 ripe bananas, sliced
- Whipped cream for topping
- Additional banana slices for garnish
Instructions
- Make Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of mini pie dishes or muffin tins to form the crust.
- Prepare Pudding: In another bowl, whisk together the instant vanilla pudding mix and milk for about 2 minutes until thickened. Set aside.
- Whip Cream: In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- Combine: Gently fold half of the whipped cream into the pudding mixture until combined. Reserve the other half for topping.
- Layer Ingredients: Spoon a layer of the pudding mixture into each crust, followed by a layer of sliced bananas. Repeat with another layer of pudding mixture until the crusts are filled.
- Chill: Refrigerate the mini pies for at least 2 hours to set.
