Instructions
- Prepare the Pistachio Cream: In a food processor, blend the shelled pistachios and powdered sugar until finely ground. Add the mascarpone cheese and blend until smooth. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Gently fold the whipped cream into the pistachio mixture until well combined.
- Mix the Coffee: In a shallow dish, combine the brewed coffee and coffee liqueur (if using).
- Assemble the Tiramisu: Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Arrange a layer of soaked ladyfingers in the bottom of a 9×13-inch dish. Spread half of the pistachio cream over the ladyfingers. Repeat with another layer of soaked ladyfingers and top with the remaining pistachio cream.
- Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Serve: Before serving, dust the top with cocoa powder and sprinkle with crushed pistachios for garnish. Slice into squares and enjoy your delicious Pistachio Tiramisu!
