Ingredients
  

  • 1 pound ground beef
  • 1 large onion finely chopped
  • 2 carrots peeled and sliced
  • 2 celery stalks chopped
  • 8 cups beef broth
  • 1 pound egg noodles
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Bay leaf Worcestershire sauce, soy sauce

Instructions
 

  • In a large pot or Dutch oven, brown the ground beef over medium-high heat, breaking it up as it cooks. Drain excess grease.
  • Add the onion, carrots, and celery; cook until softened, about 5-7 minutes.
  • Stir in the garlic and thyme; cook for another minute until fragrant.
  • Pour in the beef broth, bring to a boil, then reduce heat to low, cover, and simmer for at least 15 minutes.
  • Add the egg noodles and cook according to package directions, usually about 8-10 minutes.
  • Season with salt and pepper to taste. Serve hot, garnished with fresh parsley or a dollop of sour cream if desired.
