Ingredients
  

  • 1 pound corned beef thinly sliced
  • 1 16-ounce jar sauerkraut, drained
  • 8 ounces Swiss cheese sliced
  • ½ cup Thousand Island dressing
  • 6-8 slices rye bread slightly stale
  • 2 tablespoons butter for topping
  • Optional: caraway seeds Dijon mustard

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • Drain the sauerkraut thoroughly and arrange the rye bread slices in the bottom of the baking dish.
  • Spread half of the Thousand Island dressing over the bread.
  • Layer half of the corned beef over the dressing, followed by half of the sauerkraut.
  • Sprinkle half of the Swiss cheese over the sauerkraut.
  • Repeat the layering process with the remaining Thousand Island dressing, corned beef, sauerkraut, and Swiss cheese.
  • Dot the top with small pieces of butter.
  • Bake for 30-35 minutes until the cheese is melted, bubbly, and golden brown.
  • Let it rest for about 10 minutes before slicing and serving.
